Roasted Poblano Mashed Cauliflower

Side Dish: Roasted Poblano Mashed Cauliflower

MJ and I developed this recipe as a way to cut back on potatoes. It’s very easy to swap out the ingredients to change up the flavor as you like. I buy 4-5 Poblano peppers at a time and roast them. I store them in the freezer so I can add them to any meal easily. (I’ll do a video on this later.) You could replace this with a tablespoon or two of canned diced green chilis. I use white pepper to maintain the white color, you could use any pepper you like.

  • 1 Head fresh cauliflower steamed al dente
  • Butter, cream, milk as needed for texture
  • 1-2 tsp minced garlic
  • 1-2 Tbsp Roasted Poblano
  • White pepper
  • Salt
