Kitchen Sink Pasta

Kitchen Sink Pasta tonight. Cleaned out the fridge and rounded up some artichoke hearts, peas, mushrooms, and kale. I had some fresh pasta that I made for MJ’s birthday dinner, but any pasta will do.

I call this cooking by the seat of your pants. No measuring, just good technique and taste buds. I am building a simple flavorful sauce with garlic and olive oil (e olio) isn’t hard but it does take a little practice to do it consistently. First you have to make it and decide if you like it. Then tweak it to your taste. I don’t measure, because if I look at the pasta and it looks dry, I’ll add oil or pasta water. I use the pasta water because the starch in it helps to pull the sauce together with the cheese and oil. You can use wine for flavor too, but the pasta water is my secret to a velvety mouth feel.

Simple Sauce

  • Olive Oil
  • Garlic
  • Red Pepper Flakes
  • Black Pepper

Dinner

  • Fresh or Dry Pasta
  • Chicken, Shrimp, etc.
  • Parmesan Cheese
  • Vegies like Peas, Artichokes, Shrooms, etc.
